Zucchini Noodles (to replace spaghetti):

• 1 tablespoon coconut oil
• 2 large zucchini, cut into julienne strips
• 1 tsp garlic, minced
• 3-4 tbsp. fresh oregano, chopped (if dry then use 2 tbsp.)
• 1 pound chicken, turkey or grass fed beef
• Homemade tomato sauce (use chopped tomatoes, onions, fresh herbs and garlic)
• Additional fresh herbs to top the zucchini pasta such as basil

Wash zucchini. Using a spiraliser begin to make the zucchini noodles and place into a bowl. Carefully loosen/break up the noodles. Heat oil in a skillet over medium-high heat. Place zucchini and garlic, and herbs in skillet and heat until zucchini is slightly softened. {about 5-7 mins} To plate dish, place zucchini

“noodles” in bowl or plate and then top with your homemade spaghetti sauce.
